Turkey...let's cook!

Guys!  Guys!  We made it!  It's finally Thanksgiving!  See video link to the side.  A big congrats to all who are still standing (and cooking)!

After spending several days together, I've named my bird Gertie and she received her final prep before going into the oven just now.  Dinner is set for 3pm, so working backwards, she came out of the fridge at 9am to come to room temp.  I then added her extras (orange, onion, garlic, bay, apple cider), gave her an olive oil massage, and placed her in the oven at 350deg for the next 3.5-4 hours.  Turkey needs to reach 165-170deg internal temp, and there's no carry over cooking when brought out to rest, so make sure that's her temp from the oven!  Check throughout cooking to make sure she's not over-browning and add foil as needed.

Q&A:

1. What else does the Wong family have at T Day?

-Ruffles ridged potato chips and clam dip.  If no store clam dip, we either make our own or use French onion dip

-Red jello with canned mandarin oranges, fruit cocktail, and (debatable) walnuts.  My mom prefers with, I prefer without...which is the correct way;)

-Green bean casserole (my dad's fave; I only like the fried onions on top)

-Cranberry yam marshmallow dish.  Recipe from my Aunt Anita and my personal favorite. Make sure to chunk up the canned yams but not to mash them.  This isn't baby food, people.

-Mashed potatoes.  Using Carson Daly's mom's recipe from the "Today Loves Food" cookbook.  It calls for gin and half n half.  My first time trying it, so we'll see:)

-Rolls.  Using Kings Hawaiian this year, but any soft sweet roll will do:) 

-Canned cranberry sauce.  The one that slices in the shape of the can, which is key and should never be questioned.

-Pies.  Your preference.  My mom likes pumpkin pie; I don't.  My dad likes pecan.  I do like pumpkin cheesecake, though, and Costco makes a great one that freezes well for portion control and later use:)

-Limes for gin and tonics, cranberry spritzers, and more

-Wine
