Apple Galette!

As I discuss in Video 1, I am not a huge pie dough fan, BUT I do love a galette!  A galette is an open faced, thinner crust dessert with a better filling to crust ratio, and thus my preference if faced with a pastry crust.  This Fall I discovered the beautiful Mountain Rose apple at Kiyokawa Family Orchard in Parkdale, OR.  It has a sweet/tart flavor like Granny Smith, but a surprising crimson flesh that's a real show stopper.  Bonus:  The red hue persists through baking and doesn't stain:)

I also want to shout out Kiyokawa Orchard, as they have over 80 varieties of apples, have been around since 1911, and are one of the few remaining Nisei farms in the region.  The Nisei are the Japanese American citizens taken from their homes with 24-hour notice during WWII and placed in internment camps on US soil; a real travesty.  Many came back to businesses and homes ransacked by "neighbors" while a few were fortunate enough to have enough to start over.  This is a beautiful farm, an amazing family, and as always, supporting local farmers is a must!
